Go to “all settings”, then choose the “accounts and import” tab.
After that follow the steps, the 2 yellow highlighted areas on the image below show you where the default setttings can be changed according to your preferences. Below that as an added bonus, I have included an illustration to show you how to find your Signature in Gmail and set the defaults for that also.
